I used to be afraid of making brisket for many years for some reason. It just seemed like it was beyond my skill level. Finally, one day – I just made one. I followed a recipe I found in a cookbook and I was so impressed with the results. I could actually make a tender, fall apart brisket at home. Woot, woot!

After that initial cooking win with the brisket, I became more confident to try other recipes, flavors, and methods. One of the results of all that brisket experimentation became one of my favorite fall recipes…

This recipe has 7 ingredients plus salt & pepper.

You will need:

  • brisket
  • onions
  • ketchup
  • tomato paste
  • soy sauce
  • brown sugar
  • minced garlic
  • salt & pepper

It slow cooks in the oven for 4 hours til it cuts like butter.

Alternatively, you can also cook this in the slow cooker on low for 6-8 hours… but it will likely be so tender that it will fall apart and you won’t be able to make actual slices from it.

It has the most incredible flavor. And the sweet & sour onions that cook alongside it? Oh honey – make sure you eat every bit of those beauties. Serve them atop the brisket slices. Make a sandwich with the leftovers & put those onions on it. Then if any onions are left after that, throw them in a blender and heat it back up for one of the best gravies you ever did taste. Gravy brings out the Southern in me. Although if you’ve ever heard me talk, then you know the Southern never really goes anywhere 😉

Brisket with Sweet and Sour Onions

Ingredients

  • 1 4 to 5 pound brisket
  • 4 onions sliced into 1/4 inch rings
  • 1/4 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 4 garlic cloves minced

Instructions

  • Preheat the oven to 300°. Season the brisket generously with salt and pepper. In a large enameled cast-iron casserole, spread the onions in a single layer and lay the brisket on top. In a small bowl, whisk the ketchup with the tomato paste, soy sauce, brown sugar and garlic. Spread the sauce all over the brisket.
  • Cover the casserole and transfer 
to the oven. Braise the brisket for about 3 hours, until the meat is very tender. Uncover and continue cooking for 1 hour, until the sauce has thickened. Let 
the brisket cool slightly in the sauce for 
30 minutes.
  • Transfer the brisket to a work surface and slice across the grain. Arrange the slices on a platter and spoon some of the sauce over the top. Serve with the remaining sauce on the side.
