Bite-Sized Beef Taco Sliders Loaded with Flavor

Sometimes you just need a simple recipe that brings everybody to the table with a smile.

Last weekend was so busy and I didn’t want to be stuck in the kitchen all day, so I whipped up a batch of cheesy taco sliders.

Y’all, the smell of seasoned beef and warm Hawaiian rolls filled the house, and before I knew it, the whole tray was gone.

They’re quick, tasty, and the perfect little hand-held bites for Taco Tuesday, family dinners, a big game day, or whenever you’ve got a hungry crowd to feed.

Ingredients for Taco Sliders

  • Ground Beef: If you’ve got leftover taco meat, you can use that instead to save time.
  • Taco Seasoning Mix: A packet of Old El Paso or your favorite brand from the grocery store works just fine.
  • Shredded Cheese: I like the Mexican Blend shredded cheese, but plain cheddar cheese works too.
  • Slider Buns: A pack of King’s Hawaiian rolls make the best base.
  • Butter (Softened): Used to mix with spices and brushed over the top of the rolls.
  • Garlic Salt and Onion Powder: Just a sprinkle of each brings out a richer flavor.

Optional Add-Ons:

  • Sliced Fresh Jalapenos
  • Diced Tomatoes
  • Chopped Red Onion
  • Shredded Lettuce

How to Make Taco Sliders

Preheat the Oven: Set your oven to 375°F. Go ahead and let it warm up while you get the rest ready.

Prep the Rolls: Slice the King’s Hawaiian rolls in half, right through the middle. Place the bottom half of the rolls on a baking pan, or sheet lined with cooking spray or parchment paper. Pop them in the oven for about 3 minutes, just until lightly toasted, to help them from getting soggy.

Set the Buns Aside: Take the toasted rolls out and put them to the side for now.

Cook the Beef: In a large skillet over medium-high heat, brown your ground beef. Drain the grease with paper towels if needed. Add in the taco seasoning mix and a splash of water. I like to use less water than the packet says so the beef isn’t too sloppy. Stir until the meat is coated and seasoned.

Build the Sliders: Spoon the seasoned beef evenly across the toasted rolls. Sprinkle on plenty of shredded cheese. Place the tops of the buns back on to make little sandwiches.

Make the Butter Mix: In a medium bowl, stir together softened butter, garlic salt, and onion powder. Spread the mixture over the top of the rolls so they bake up golden and flavorful.

Bake Again: Slide the pan back in the oven and bake for about 7 minutes, or until the rolls are golden brown and the cheese inside is all melted.

Garnish: Carefully take them out of the oven and sprinkle with fresh cilantro.

Serve and Enjoy: Set out all your favorite taco toppings and let everyone dress up their individual sliders however they please.

How to Store Leftovers

If you’ve got leftover taco sliders, just let them cool a bit before wrapping them up. Store them in an airtight container in the fridge, and they’ll keep for about 3 days.

When you’re ready to eat, pop them in the oven or air fryer until the buns are warm and the cheese is all melty again.

Taco Sliders

Ingredients

  • 1 package Kings Hawaiian Rolls
  • 1 lb. Ground Beef
  • 1 1 oz. Packet of Preferred Taco Seasoning
  • 1 1/2 cups Shredded Mexican Blend Cheese
  • 1 tbsp. Butter softened
  • 1/4 tsp. Garlic Salt
  • 1/4 tsp. Onion Powder
  • 1/4 tsp. Optional additions:  fresh jalapenos, tomatoes, cilantro, and red onion.

Instructions

  • Preheat your oven to 375 degrees F.
  • Slice the Kings Hawaiian Rolls in half, lengthwise. Place the bottom half of the rolls on a prepared baking sheet or baking pan.  Bake for 3 minutes, or until slightly toasted.  (This will help the buns from getting soggy with the ground beef.)
  • Remove the toasted buns and set aside for now.
  • In a large skillet, begin to cook the ground beef according to taco seasoning package instructions. (I prefer to use less water than required on the instructions, so the meat isn’t too sloppy).
  • Once the beef is cooked, spoon the crumbles evenly over the bottom buns.
  • Add the shredded cheese and remaining top half of the buns.
  • In a small bowl, stir together the softened butter, garlic salt and onion powder. Spread the mixture over the top of the buns.
  • Bake for 7 minutes, or until golden brown.
  • Carefully remove from the oven and garnish with fresh cilantro. Each individual can add whatever fresh ingredients they wish to their slider.
