BBQ Pimento Cheese Grilled Cheese Sandwich

Did you know that today is National Grilled Cheese Sandwich Day? Well, if you didn’t – you do now.
Isn’t it funny how so many foods have holidays dedicated to it? I wonder who dictates which food is celebrated on each day.
I wanted to share a grilled cheese recipe to go along with the ‘occasion’ and at first, I was going to try creating one of those ultimate grilled cheese sandwiches with like 19 different kinds of cheese on some fancy bread. But, then I decided that I would just share with you all an actual (easy) grilled cheese ‘recipe’ that I make for myself and my family all the time. Seriously, all the time. It’s one of my favorites.
BBQ & Pimento Cheese Grilled Cheese SandwichesÂ
I always make these with leftover bbq or pulled pork.
This grilled cheese sandwich and these nachos are my favorite ways to use up leftover pulled pork and/or bbq. So much yum.
These grilled cheese sandwiches are super easy too. Bread, pimento cheese, leftover bbq, butter… I mean, it’s not rocket science. These do work a bit better if you warm the pork in the microwave before putting it on your grilled cheese.

BBQ Pulled Pork & Pimento Cheese Grilled Cheese Sandwich
Ingredients
- leftover bbq or pulled pork
- pimento cheese
- bread I like plain ol' white bread
- butter
- bbq sauce to taste optional
Instructions
- Melt a pat of butter in a skillet over medium heat. Spread pimento cheese on one slice of bread and lay the dry side down over the melted butter. Scatter a bit of warmed bbq or warmed pulled pork over the pimento cheese. Drizzle with more bbq sauce, if desired. Top with another slice of bread. Cook, over medium heat, until the bottom side is browned. Either spread a bit of softened butter over the top of the top side of bread or melt a bit of butter in the bottom of the skillet to cook the other side in until browned.
