Duke’s Mayo Crusted Ribs

The south is the pork barbecue mecca of the world with BBQ rib recipes, techniques and traditions abound. Depending on the region, your ribs could be sweet, tangy or spicy. Everyone has a favorite style, but I think all barbecue enthusiasts will be intrigued by this particular method. It’s one that I had never heard of before and once I learned of it, the curiosity to try it persisted. 

So, what’s this interesting method to cooking these ribs?

This recipe came from the Duke’s Mayo website. I was cruising their recipes when I had the chance to attend their beer collaboration launch and this one took my attention. These ribs are coated with a kicked up mayonnaise before they go into the oven. That’s right mayonnaise, but let’s not forget the kicked up part. Then afterwards, you sear it off on the grill or a large skillet – or in the oven on broil – and it makes one delicious, unforgettable crust. Starting the ribs in the oven makes them ultra-tender, but searing them off is just as important for that mouthwatering crust. 

Now, some of y’all may be looking at me weird at this point… but that’s ok. Take a second and look at these rib pictures and tell me you’re not intrigued too.

  • 1/2 tsp. cumin
  • 2 tsp. paprika
  • 1 tbsp. granulated garlic
  • 2 tsp. chili powder
  • 2 tsp. salt
  • 1 Tbsp. coarsely ground black pepper
  • 1/4 cup packed brown sugar
  • 1 tsp. dry yellow mustard
  • 3/4 cup Duke’s Mayonnaise
  • 1 rack (about 31/2 lbs.) baby back ribs

How do I prepare this recipe for Duke’s Baby Back Ribs?

It’s so easy! Here’s how!

Preheat the oven to 225°F. Combine all dry ingredients in a bowl.

Divide spice mixture in half. Mix one half of the spices with the mayonnaise. Reserve the other half for sprinkling on the ribs. Place large pieces of foil on a rimmed baking sheet.

Cut rib rack(s) in half if needed, so that they fit on the baking sheet. Set ribs on the foil and baste with the mayonnaise mixture, turning to coat on all sides. Wrap ribs completely with foil and place on the baking sheet. Bake for 3 hours.

Remove the baking sheet from the oven, and carefully unwrap the ribs.

Sprinkle the remaining half of the seasoning mixture evenly over the ribs turning to coat both sides. 

Place ribs on a preheated grill or broil in the oven. Cook until the coating is bubbly and browned. Serve.

Duke’s Mayonnaise Baby Back Ribs

Ingredients

  • 1/2 Tsp Cumin
